摘 要:該文采用熱脫附技術(shù)富集百香果的果肉、果汁和果籽中的香氣成分,并通過氣相色譜-質(zhì)譜聯(lián)用技術(shù)(GC MS)進行分析與鑒定。結(jié)果表明,百香果的香氣成分以酯類、醇類、烯類和酮類為主,同時含有少量噻唑類、呋喃類、 苯類和醛類等化合物。百香果肉含量較高的香氣成分是丁酸乙酯、乙酸乙酯、己酸乙酯,百香果汁相對含量較高的 香氣成分是丁酸乙酯、己酸乙酯、乙酸乙酯、丁酸己酯和乙酸己酯,百香果籽中相對含量較高的香氣成分是丁酸乙 酯、己酸乙酯、乙酸乙酯、丁酰乳酸丁酯和己酸己酯。本文對比分析了百香果各個部位間的香氣成分,為深入研究其 香氣組成提供了科學依據(jù)。

Analysis of Aroma Components in Passion Fruit by Thermal Desorption Method

Abstract: In this paper,thermal desorption technology was used to enrich the aroma components in the pulp,juice and seeds of passion fruit,and gas chromatography- mass spectrometry(GC- MS)was applied for analysis and identification. The results showed that the aroma components of passion fruit were mainly esters,alcohols,alkenes and ketones,with a small amount of compounds such as thiazoles,furans,benzenes and aldehydes. The aroma components with relatively high content in passion fruit pulp were ethyl butyrate,ethyl acetate and ethyl hexanoate; those with relatively high content in passion fruit juice were ethyl butyrate,ethyl hexanoate,ethyl acetate,hexyl butyrate and hexyl acetate. The aroma components with relatively high content in passion fruit seeds were ethyl butyrate,ethyl hexanoate,ethyl acetate,butyl butyryl lactate and hexyl hexanoate. This paper compares and analyzes the aroma components among different parts of passion fruit,which provides a scientific basis for in-depth study of its aroma composition.
